Ingredients for 2 people:
- 2 cups fresh arugula
- 1/3 cup sweet potatoes (cooked and diced)
- 2 tablespoons of feta cheese
- 1/4 cup sliced fennel
- 1/4 cup sliced sweet onion
- 2 tablespoons dried cranberries
- extra virgin olive oil
- Salt and pepper to taste
The preparation :
- Cut up a sweet potato and toss in olive oil, salt and pepper.
- Bake at 190° for 30 to 40 minutes (until tender).
- In a small saucepan over medium heat, add the sliced fennel and sweet onions. Drizzle with olive oil, salt and pepper and cook for 5 to 7 minutes (until they are translucent).
- In a medium-sized salad bowl, combine all the salad ingredients and add the sweet potato pieces.
- Serve the salad with a light drizzle of EVOO, balsamic vinegar and freshly squeezed lemon.
